Apple Harvest Blondies

These are really good...really.  The batter looks like carmel sauce and is delicious.  It will call to you and you won't be able to resist!  This recipe is really nice because it uses so few supplies.  You start off by melting the butter in a pan on the stove, and then you throw everything else into that pan, which means a lot less to wash!

Apple Harvest Blondies
2/3 cup unsalted butter
1  1/2 cups brown sugar
3 eggs
2 cups flour
1 teas. baking powder
1 teas. vanilla extract
2 medium apples, peeled & chopped

3 oz cream cheese, frozen for 1 hour
1/4 cup brown sugar
1/4 cup finely chopped walnuts/pecans
1 teas. cinnamon

Preheat oven to 350F and lightly grease a 9 x 13 in. pan.  Melt butter.  Stir in brown sugar and mix well.  Add eggs and vanilla, mix.  Add in flour and baking powder until just combined, and add apples.  Spread batter in pan and chop cream cheese into small bits.  Mix with 1/4 cup brown sugar, nuts, and cinnamon.  Sprinkle evenly over batter.  Bake for 35-40 minutes, until lightly browned and a toothpick comes out clean.
