Rocky Road Cookies

Apparently I'm not capable of making brown poo-looking cookies look decent.  Hm.  I tried.  They taste a lot better than they look!  If you make them, make sure you use parchment paper on the pans...the recipe says that, but I obviously didn't read it because the pans were pretty fun to clean.

Rocky Road Cookies (aka road kill)
2 cups flour
1 cup unsweetened cocoa powder
2 1/4 teas. baking soda
1 1/2 teas. salt
1 cup unsalted butter, room temperature
1 1/4 cups granulated sugar
3/4 cup packed brown sugar
3 large eggs
3 teas. vanilla extract
2 teas. instant coffee powder
1 1/2 cups chocolate chips
1 cup chopped walnuts
1 cup marshmallows

Preheat oven to 375F.  Whisk together flour, baking soda, and salt; set aside.  Cream butter and sugars.  Add eggs one at a time, beating well after each addition.  Mix in vanilla and coffee powder.  Add in flour mixture.  Stir in chocolate chips, walnuts, and marshmallows.  On parchment paper lined cookie sheets, drop tablespoonfuls of the dough about 1 inch apart and bake for 10 minutes.
