A few days ago I made this
gingerbread recipe, which was gone in a matter of hours.  The next day I made it again, and the same thing happened.   It's just too good to pose for a picture!  I've had gingerbread cookies, but never gingerbread cake before this.  And it's really really good....nice and spicy and moist.  Yum.

1 cup flour
1 teas. baking soda
1/4 teas. salt
2 teas. cinnamon
1 teas. ginger
1 egg, lightly beaten
5 tables. dark brown sugar
1/2 cup dark molasses
1/2 cup buttermilk
1/4 cup melted butter

Combine flour, baking soda, salt, cinnamon, and ginger.  In a mixing bowl combine egg, brown sugar, molasses, and butter.  Gradually add the flour mixture to the wet, beating until smooth.  Pour batter into a greased and floured 8 inch pan and bake at 350F for 30 minutes.
