These cookies have a pretty different combination of ingredients in them...apple, carrot, peanut butter, raisins, coconut, and oats, but they taste surprisingly good together. The recipe is from The Cookie Bible. It calls for crisco but I used butter and they turned out fine, and I also added some walnuts. I don't know about eating them for breakfast, but they're kind of 'healthy'. Well they have fruit in them at least.
