Cherry Cream Cheese Pie

This pie has a graham cracker crust, a cream cheese layer, and cherry pie filling.  Very good.  Plus you only need to bake the crust!

Cherry Cream Cheese Pie
Crust:
1  1/2 cups graham cracker crumbs (about 12 rectangles)
1/4 cup sugar
1/4 cup butter, cut into pieces

Preheat oven to 375F.  Break up graham crackers into a food processor and pulse until no chunks remain.  Mix in sugar and butter until combined.  Press firmly in the bottom and up the sides of a 9" pie pan.  Bake for 8 minutes.

Pie:
8 oz cream cheese, softened
1/2 cup sugar (a bit less)
1 (21 oz) can cherry pie filling

Beat together cream cheese and sugar until light and fluffy.  Spread into cooled crust.  Pour pie filling on top and cover with plastic wrap, chill for 2 hours.  Leave in the refrigerator.
