Catching up

Alright, this is a rushed post, and I won't be baking for the next few days!
We have some delicious oatmeal cookies with chocolate chips and peanut butter chips (recipe below), banana muffins with cream cheese filling (recipe here), and interesting soda flavors. The muffins should have more filling in them; I thought I put more in than I did and I was worried about them overflowing. They were good, but would have been better with more filling! The soda flavors are cola champagne, pineapple, and fruit punch. Mine was the pineapple. It was interesting, but it would be a whole lot better if you took some actual pineapple juice and mixed it with sparkling water!


Alright, cookie recipe!  This recipe divides in half very easily in case you only want about 18-20. The halved amounts are pretty easy (and half of 1 1/2 cups is 3/4 cup).


Peanut Butter and Chocolate Chip Oatmeal Cookies
3 cups flour
1 teas. baking powder
1 teas. baking soda
1 teas. salt
1 cup butter
1 cup light brown sugar
1 cup granulated sugar
2 teas. vanilla extract
2 eggs
1 1/2 cups rolled oats
1 cup semi-sweet chocolate chips
1 cup peanut butter chips


Preheat oven to 350F. Combine flour, baking powder, baking soda and salt in a bowl.
Cream the butter and sugars. Stir in the vanilla and eggs. Mix in the flour. Stir in the rolled oats and both chips. Spoon onto pans and bake for 10-12 minutes. Cool on wire racks.
